Single-Serve Protein Pancakes

There’s nothing better than starting the day with a stack of pancakes — especially when they’re packed with protein and made from simple, wholesome ingredients. These single-serve Protein Pancakes using Earth Chimp vanilla protein powder are one of my go-to breakfasts when I want something quick, filling, and satisfying. They’re made with oats, banana, and a scoop of Earth Chimp protein powder for a naturally sweet, fluffy, and nutrient-packed bite. Perfect for busy mornings, post-workout fuel, or a cozy weekend brunch — this recipe is easy to whip up in minutes and leaves you feeling good from the inside out.

Ingredients:

  • ¼ cup oats (rolled or quick oats)

  • ½ banana (ripe)

  • 1 egg

  • 1 scoop Earth Chimp protein powder (any flavor — vanilla or chocolate works great)

  • 2–3 tbsp milk of choice (dairy or plant-based; adjust for consistency)

  • ¼ tsp baking powder (optional, for fluffiness)

  • Pinch of cinnamon or salt (optional)

  • Light oil or butter for cooking

  • 1-2 tbsp of Hemp & Chia seeds (optional for added protein and fiber)

Instructions:

  1. Blend the batter
    Add oats, banana, egg, protein powder, milk, and baking powder to a blender. Blend until smooth and pourable.
    Tip: If it’s too thick, add a splash more milk.

  2. Heat your pan
    Lightly grease a nonstick skillet with oil or butter and heat over medium-low heat.

  3. Cook the pancakes
    Pour small rounds of batter (about 2–3 tbsp each) onto the pan. Cook for 2–3 minutes per side, until golden and cooked through.

  4. Serve and enjoy!
    Stack them up and top with your favorites — I love topping mine with the other half of the sliced banana, nut butter, fresh blueberries, greek yogurt, or a drizzle of maple syrup.
